Joshi Rice 1/2 kg
Mota Rice 1/2 kg
Mash ki dal 1 pao and 1 (handful)
Methi seeds 1/4 tsp
Salt 1 1/2 tsp
Soda 1/2 tsp.(only use in water)

Method:

Soak all three separately overnight.Next morning,grind each seperately very finely in blender. Then
mix all together and add in it salt 1 1/2 tsp.(in water add 1/2 tsp.soda)
Leave it aside,covered for about 5-6 hours.
Heat tawa and slightly grease it, put 1 spoonful of mixture in the center and spread round and round
with the help of the same spoon.Pour 1 tsp.each of oil,on top and sides.When sizzling and brown,add
filling of your choice.Turn and remove.

Masala Dossa Filling

Potatoes 1 kg (Boil and mash slightly)
Green chillies 6-8 (chopped)
Ginger 2″pieces (chopped coarsely)
Curry patta 12 leaves.
Chana dal 2 tsp
Mash ki dal 2 tspz
Onion 2(chopped in square pieces)
Oil 1/2 cup
Salt 1 1/2 tsp
Haldi 3 tsp
Rai 1 tsp

Method:

Heat oil,add chana and mash dal with rai, fry till light golden,add in all the rest,fry till onions are
soft, add in about 1/2 cup water then add in the mashed potatoes,slightly stir and remove.

Mince Filling:

Mince 1/2 kg
Onion 2 (coarsely chopped)
Ginger 1 tsp
Garlic 1 tsp
Tomatoes 3 (chopped)
Chilli powder 2 tsp.
Haldi 1/4 tsp
Salt 1 tsp
Green chillies 8 (chopped)
Coriander leaves 1 (bunch)
All spice 1/2 tsp

Method:

Heat oil fry onions transparent,add mince and all the above ingredients.Fry well,till mince gets
tender and dry.Lastly,add in finely chopped coriander leaves and all spice powder.

Chicken Filling:

Chicken 1 boneless cut in 1″piece
Onion 2 big (chopped)
Salt 1 tsp
Chilly powder 1 tsp
Haldi 1/4 tsp
Oil 1/4 cup
Green chillies 4-6
Coriander leaves(chopped)
All spice 1/2 tsp

Method:

Same as for mince filling.

Chutney For Dossa And Meduvada:

Ingredients:

Fresh coconut 1 (grated)
Chana bhuna 1 cup
Green chillies 12
Ginger 2″
Curry patta 8 leaves.
Grind all together in blender,with a little water till fine,then give beghar and use.
